Guacamole Salad Recipe – Low Carb & Keto Friendly

This Guacamole Salad is a favorite of mine! Inspired by Ina Garten, this is perfect all year long, but especially on summer days. Bring this to your next gathering for a low carb meal that will please anyone.

 

Because there are black beans in this Gaucamole Salad recipe, it technically classifies as low carb. If you are strict keto, just omit the black beans and you’ll be all set! I personally avoid beans for the most part, but they are so good in this salad, that I will indulge on occasion! I also know that I will stay in ketosis even when my diet isn’t perfect because I drink pure theraputic ketones. You can grab some samples HERE.

GUACAMOLE SALAD RECIPE:

 

 

 

 

Ingredients:

1 pint grape tomatoes, halved
1 yellow bell pepper, seeded and diced
1 (15 ounce) can black beans, rinsed and drained
½ cup red onion, diced fine
2 jalapeno peppers, seeded and diced fine
2 avocados, diced

 

For the dressing:

Juice of 1 lime
¼ cup olive oil
1 teaspoon salt
2 cloves garlic, minced

 

 

 

Instructions:

In a small bowl or jar, mix the ingredients for the dressing.
In a large bowl, combine the ingredients for the salad EXCEPT the avocado. Pour the dressing over the salad and toss to combine.
Just before serving, fold in the avocado.

Enjoy!

My 2021 B6 Stalogy Setup + Video

It’s that time of year when all the planner people celebrate! Time to setup another planner for the new year! I have been a planner person for as long as I can remember. I grew up using planners and lists and all things stationary. I still use a paper planner, even in this digital age. I can’t imagine myself ever going completely digital.

After using many, many planners over the years, I believe I have finally found planner peace. I have used a B6 Stalogy for all of 2020, and could not be happier. It is a perfect fit for my brain and my life. If you aren’t familiar with a Stalogy, it is essentially a blank bound notebook with 365 pages. It comes in a few different sizes – A6, B6 and A5. I love the B6 size – right in the middle. I can throw it in my purse if needed, but there is plenty of space for me.

 

I know we all love peeking into other planners, so I filmed a quick video of my Stalogy setup for 2021. Keep in mind I am a homeschool mom of 8, and I have this blog and my Red Aspen and Beautycounter businesses. I use my Stalogy for everything – monthly, weekly, and daily planning, habit tracking, journaling, notes, lists, and anything else I want. I do have a separate A5 planner for my business and a pocket planner that I use as a wallet. But my Stalogy is my go-to planner.

90 Day Chronological Bible Reading Plan

Have you ever read through the whole Bible? I have done it a few times and loved it. There was one year that I read through the Bible in 90 days with a small group of friends. That was an experience, to say the least! I know there are different schools of thought when it comes to reading the Bible. I have read my Bible in various ways, and have learned much through each way. I do not think there is a wrong way to read your Bible. Just get in the Word! God will use the time you are in your Bible as He wants to use it.

I think reading your Bible can be an act of discipline. We don’t always want to read our Bibles, and I understand that. But the more we make it a habit, the easier and more natural it will become. Sometimes, pieces of our faith are built on a foundation of disciplined habits. 

 

With that said, over the last year, I have struggled a bit with consistency in my Bible reading. We all know how the year 2020 went, so some of it was that. However, I had an extremely high risk pregnancy from vasa previa with my 8th baby during most of 2020. This led to some depression and anxiety and more. Before I was fully healed from that, my sweet 9 year old daughter was diagnosed with leukemia. See our story here. Although my relationship with God grew in ways I could never have expected or prepared myself for, my spiritual disciplines were lacking.

 

Because I know I need to work on making my Bible reading a habit this year, I decided to read through the Bible in 90 days again. However, I wanted to read through my Bible in chronological order – something I have never done. I created a printable to help me keep track of my readings – if you know me, you know I love a good tracker where I can check off boxes!

I shared my plan on Instagram, and many of you asked where you could get the printable plan. So, I decided to share it with you all and open it up to the community!

I will be using The Jesus Bible to read through this plan. I know many of you ask about my Bibles on Instagram. I easily use my HCSB Notetaking Bible most often, but that Bible is filled with my notes. You can see plenty of pictures on Instagram. When I read through this Bible, I inevitably read through my notes as well. I love doing this, but it takes me on rabbit trails, because my notes are dated and so personal. When I am trying to read through the Bible in a short amount of time, I don’t want to be distracted with so many notes. So, I am using The Jesus Bible for this. It does have notes throughout the Bible, but they aren’t all mine, so I know I won’t feel the need to read each and every one. I love this Bible and don’t read it nearly enough! This is just my personal preference though – you know what will work best for you! I have a highlight dedicated to Bible Flip-throughs on Instagram if you want a peek inside a few.

No Cook Pumpkin Spice Playdough

Oh, friends – there is just something about fall, isn’t there? Every year, I tell myself not to rush summer and to appreciate all the blessings that summer brings. And I truly do…but I would by lying to myself if I said that I don’t enjoy fall most of all! I love everything about it.

 

My kids love playdough all year round, so we whipped up this simple recipe for a No Cook Pumpkin Spice Playdough that is perfect for fall! If you don’t have essential oils, you can skip that as they are optional. Just use any pumpkin pie spice you have around your cabinets.

 

Enjoy creating with your kiddos! We only homeschool four days a week, which leaves Fridays for fun projects like this!

 

No Cook Pumpkin Spice Playdough

 

Supplies:

1 cup flour
½ cup salt
2 tablespoons cream of tartar
1 teaspoon pumpkin spice seasoning
1 tablespoon oil
1 cup boiling water
Food coloring (there are natural options!)

Optional: essential oils like, clove, nutmeg, thieves etc

 

 

Directions:

1. In a bowl, combine the flour, salt, cream of tartar, and cinnamon.
2. Combine the oils and food coloring with the boiling water. Stir the oily water into the dry
ingredients. If you want to add some essential oils, now is when you would mix a few drops in. Mix well.
3. Remove the dough and knead until it is no longer sticky.

As much as I don’t want to rush summer, I love when little pops of autumn start showing. To me, fall also means a fresh start. I know that is actually the opposite of what fall stands for, but with the beginning of a new homeschool year, fall feels like a new start to me.

Our Homeschool Room Tour || 2020 || Minimal, Large Family

 

Hi friends! It is that time of year when all the homeschool moms are in planning and organizing mode. And we love it, don’t we??

I just finished organizing our homeschool room for the upcoming school year and thought I would give you all a peek inside. I haven’t shared a homeschool room tour in a few years, and things have changed since then! I have added children, changed curriculum, changed houses, and have definitely learned to live with less. If you want to look at our old homeschool room, you can watch that here. Don’t mind the bad camera!

For the 2020-2021 homeschool year, I will have 6 students and a toddler, with a baby joining us this fall. I explain in the video how it works in this school room, as well as how we actually end up using our whole house for school. I included pictures here as well in case that helps you.

I got this school time calendar here and below that you’ll see our Morning Basket. That doesn’t always stay there, but it is easily brought out into our living room or to the school table.

 

 

Our rolling cart holds some magazine holders for the younger students, as well as some manipulatives, flash cards, and odds and ends. It is easy to roll this cart this out into the living room or dining room so I can work with the younger ones there.

 

 

This is our main bookshelf in the school room. You can see most of our school supplies in this post. From the top shelf down:

  1. Laminator, hole punches, paint box.
  2. My planners and homeschool books, and bins I don’t want the little ones touching – post its, stapler, pens, stickers etc.
  3. My oldest’s history books and literature (he keeps his school work in his room), and then my Teacher’s Manuals.
  4. My older 2 girls share this shelf, one on each side.
  5. History read alouds for the younger students, work we are still finishing in the magazine holders, and our Exploring Nature With Children binders.
  6. Puzzles and extra bins that we will fill as needed.

This shelving unit is from Target and houses some fabric bins with art supplies, extra wall maps and helps, activities for the toddler, flashcards and more. The blank map is from Beautiful Feet, and the Presidents poster is here along with the map of the United States.

 

 

This is a diffuser that comes in the Young Living Starter Kit as well as some of our favorite essential oils for focus and concentration. We always have this going when doing school work!!

 

 

 

This smaller bookshelf in the corner holds our printer, extra school supplies, the calendar pieces, construction paper and crayons, our treasure box and more books. The posters on the wall are from the Dollar Tree.

 

 

 

The caddy on the table holds school supplies that the kids reach for often – pencils, markers, dry erase marker, scissors, rulers, tape, glue. The plant posters hanging on the door can be found here.

 

 

My husband built these shelves for me, so I can’t link them. But he seemed to think it was simple, just using a few boards from Home Depot! These shelves hold many of our nature study books, our beautiful handmade wooden pieces from Treasures From Jennifer, and the Charlotte Mason series. The chest holds our board games and more puzzles.

Becoming a Beautycounter Consultant – Your FAQs Answered

There’s nothing quite like answering honest questions when you fully stand behind and love the company you represent. Right? I truly get excited when other moms reach out with questions about starting a Beautycounter business. That means- they are sincerely curious and usually open minded, and that they are just like me! I never start anything without doing my due diligence. So, congrats on asking questions, mama!

Your Beautycounter Consultant FAQs – Answered: 

 

#1 Question! How much does it cost to get started?

Right now, we are offering a digital enrollment package at only $50. Yes, really. That fee includes your personal website, access to your backend consultant hub and all the training you need. We have a few different starter sets to fit any budget and need. You even have the option of earning a minimum of $100 back in product credit in your first month (plus your commission!).  If you are already a Band of Beauty member, you can upgrade to a consultant account for only $21 AT ANY TIME.

 In the month of July, you can start your business for only $20

What is the average Beautycounter consultant income?

I cannot answer this one with complete accuracy, of course. Your income depends on many factors, including how much work you put into your business. I can tell you that I have never seen a compensation plan set up quite like that if Beautycounter. It is set up to help you earn income and free product right away. 

Consultants start at a 25% commission and that increases to 35% based on your performance. When you decide to build a team of like minded women, the compensation plan gets even more rewarding! When you join arms with others with the intent of building each other up, amazing things happen!

Do I need to host parties?

We do have something called socials, which may be similar to what you are asking. You can host in person socials, with a host opening her own home to her friends. Or you can host socials online, either through yourself or someone else. Based on the sales of that social, the rewards go from one product at 50% off up to 5 products at 50% off and 5 free products. The benefits are many to hosting socials. The average social has sales of around $550, and if you think of your commission from that, you can see why many consultants choose to do them. They open up your circle as well. However, this is your business, and if you choose not to do socials, you don’t have to. I have never hosted a social…

Is the Band of Beauty Member the same as a Consultant?

Nope, not at all! The Band of Beauty Membership is like Beautycounter’s VIP rewards program. It is set up to reward those clients who love our products but are not ready to become consultants. Is there a discount for Beautycounter consultants?

Is Beautycounter a Pyramid Scheme?

If I had a dollar for every time I have heard this! So, a pyramid scheme is actually illegal. It is the idea of recruiting people under you with the promise of making money, but with no actual payments. I can assure you that Beautycounter consultants actually make money! You get paid based on your efforts. If you want to treat your business as a hobby in order to earn free product, great! However, if you are willing to put the time and effort in, you will get paid like a business. 

Will I have the support and training that I need to succeed?

Without a doubt! And I don’t say this lightly. I have been with other companies and worked with other teams, and haven’t seen anything quite like what we have here. The women who partner with Beautycounter truly care – not only about what they are putting on and in their bodies, but they care about the greater good. We want to see change and we truly want to help educate others.

As far as training, we have so many resources for you. When you join, you’ll have access to an entire online university. Here you will have all your training, from beginning consultant and beyond. We are always learning, so we cam continue to educate others. We also have team groups you’ll be added to, and smaller chats and text groups, if you choose. I am personally here as your mentor and will be there to answer questions, to guide you, but also to empower you to build a business you can truly call your own for life.

Is there a monthly minimum in sales?

There is no monthly minimum for sales, but there is a 6 month sales minimum of $750. Trust me when I say this should not stress you out. If you are joining Beautycounter to build a business, you will be sure to meet that without question. Even if you do not meet that $750 in 6 months, you will not be penalized. You will end up just becoming a Band of Beauty member instead! 

What makes Beautycounter different from other beauty direct sales companies?

Air Fryer Garlic Parmesan Chicken Wings

Although I use my air fryer year round, there’s something about cooking wings in the air fryer during the summer months. Right? I can’t quite explain it. My whole family loves this Garlic Parmesan Chicken Wings and I love that they can be easily cooked in our air fryer! Even my picky kids love this recipe, so I hope your family does too! And don’t worry, I know many of my readers follow a keto diet… these fit right in to that lifestyle!

Air Fryer Garlic Parmesan Chicken Wings

 

 

 

Ingredients:

3 to 4 pounds chicken wings

5 to 6 cloves garlic, minced

¼ cup olive oil

Salt and pepper to taste

¼ cup grated parmesan cheese

 

 

Directions:

  1. Preheat air fryer to 390 degrees. Prepare air fryer basket with nonstick cooking spray.
  2. Place wings in a large bowl. Pour oil over wings and toss to coat.
  3. Add garlic, salt, and pepper to the wings and toss again.

 

 

 

4. Place wings in air fryer basket with space between to allow air to circulate.

5. Cook chicken wings 25 to 30 minutes (25 minutes for thawed but closer to 30 minutes for frozen), flipping halfway or until the chicken wings are done.

 

6. Toss cooked chicken wings in grated parmesan cheese before serving.

 

 

 

And there you have it! Delicious Air Fryer Chicken Wings that the whole family will enjoy. These are great even in the hot summer months, when you don’t feel like cooking!
