This Guacamole Salad is a favorite of mine! Inspired by Ina Garten, this is perfect all year long, but especially on summer days. Bring this to your next gathering for a low carb meal that will please anyone.
Because there are black beans in this Gaucamole Salad recipe, it technically classifies as low carb. If you are strict keto, just omit the black beans and you’ll be all set! I personally avoid beans for the most part, but they are so good in this salad, that I will indulge on occasion! I also know that I will stay in ketosis even when my diet isn’t perfect because I drink pure theraputic ketones. You can grab some samples HERE.

GUACAMOLE SALAD RECIPE:
Ingredients:
1 pint grape tomatoes, halved
1 yellow bell pepper, seeded and diced
1 (15 ounce) can black beans, rinsed and drained
½ cup red onion, diced fine
2 jalapeno peppers, seeded and diced fine
2 avocados, diced
For the dressing:
Juice of 1 lime
¼ cup olive oil
1 teaspoon salt
2 cloves garlic, minced
Instructions:
In a small bowl or jar, mix the ingredients for the dressing.
In a large bowl, combine the ingredients for the salad EXCEPT the avocado. Pour the dressing over the salad and toss to combine.
Just before serving, fold in the avocado.
