Simple and Healthy On the Go Summer Snacks

Summer is officially here in New England and we couldn’t be happier! Although we technically are year round homeschoolers, we do take a longer stretch off in the summer, and really look forward to it.

We enjoy spending most of our days outside during the summer months and beyond. Because we live on the East Coast, there are so many things do do during the summer months that we otherwise can’t. We can visit our local splash pads and Dinosaur Place, go to numerous beaches, play at the parks, go camping and more.

When little kids are busy, they tend to go one of two ways – they are so busy they forget to eat, or are constantly ravenous.

Snacks are a must for our family, no matter the season. In the summer months, snack options need to change just a bit to accommodate for availability and hungry bellies.  My goal for the majority of our snacks is to make sure they are not just filled with empty calories that will leave them hungry in twenty minutes. If you are a mom, you know exactly what I mean!

Ideally, I look for a combination of healthy fat and protein, with minimal sugar, in our snacks. Here is a list of healthy, on the go snacks you can give your little ones while you are out and about this summer. You may even enjoy them yourself!

 

 

Simple, On-The-Go Summer Snacks

 

Homemade Yogurt Cups

Add a little fruit at the bottom of some travel containers or jars with lids, and then some plain full fat Greek yogurt. If you kids need the extra sweetness, you could add a small amount of raw honey to the container. We like to use frozen berries for these, because when they thaw, they stir into the yogurt just perfectly.

 

Fruit and Cheese –

Make sure to select in season fruits for your snacks. Not only will your fruit taste even better, but we all want to do our part! Pair some fruit with cheese cubes and divide them up with little snack trays. My kids love this and it is so simple. Bring on the watermelon and strawberries!

 

Olives and Dried Meat –

Olives are definitely a favorite snack in our house! We love an assortment of olives, but your kids may prefer black olives only. We also love “meat sticks,” as my kids call them. Sometimes, a natural option can be hard to find, but we have managed on most occasions. Make sure to check the ingredients, as dried meat can be full of nasty things. But, it is possible to find dried meat that won’t scare you away with its ingredient list.

These are a treat for me and my kids! I don’t always indulge, but when I do, I make sure it is worth it. These are dark chocolate covered freeze dried coconut. They are melt in your mouth perfection! You only need a few to satisfy even the biggest chocolate craving. I like to keep them in the fridge and grab a couple when I want them. They are a great choice to take on the go, too. Not messy at all, like most chocolate snacks, and easily shareable.

Energy Balls –

I am sure you have heard of Energy Balls. While many stores carry different versions, I always prefer making my own. The kids love to be involved, and it is quite simple. You can try these No Bake Energy Balls.

 

Fat Bombs –

Even if you don’t follow a Keto diet, you may want to try Fat Bombs. I know my kids love them, and they are great in the summer months and on the go. They can easily be stored in containers and there is a variety of recipes out there, so you will be sure to find one your kids love.

 

Trail Mix –

This can be as simple or as complicated as you make it. I tend to take a handful of whatever nuts and seeds we have, add some coconut shreds and raisins and divide it up into containers! On occasion, I will add some Enjoy Life or Lily’s Chocolate Chips too, if they aren’t outside in the hot summer sun.

Crackers and Hummus or Guacamole –

This is such an easy snack to enjoy at home or on the go. Grab some whole grain crackers and mush up some avocados. If you would prefer a store bough guacamole or hummus, we love Wholly Guacamole and Sabra Hummus.

A Simple Way to Feed Your Family Healthy Food

Did you know that March is National Nutrition Month? If you have been around here for any amount of time, you likely know how passionate I am about healthy living. I am a busy homeschooling mom of seven, with an online business…but I still make my health and the health of my family a top priority. Thank goodness for this Instant Pot beef stew recipe! After starting a Keto diet, I was missing my favorite comfort foods. Typically, beef stew consists of lots of carbs, which isn’t something you want to indulge in when trying to maintain ketosis. Thankfully, this beef stew allows me to indulge without feeling any guilt!

A traditional beef stew, with fall-apart tender beef, vegetables, and rich broth, is almost impossible to pull off on a weeknight. It can take two to three hours of slow simmering for the tough cubes of stew meat to begin to soften, and for the flavors to develop in the broth.

That’s fine if you’ve got the time, but this Instant Pot beef stew recipe takes stew from a special-occasion weekend dinner to totally doable on a weeknight.

Instant Pot is a brand name, but you can use any electric pressure cooker to make this recipe.

Start by browning your meat right in the pressure cooker, then add chopped aromatic vegetables, broth, and spices, secure the lid and set the cook time for 35 minutes.

You don’t even have to watch the pot while it cooks. When time is up, release the pressure valve and enjoy!

This Instant Pot Beef Stew recipe makes a richly flavored, hearty stew in less than half the time of a traditional recipe.

Ingredients

  • 2 Tbsp. olive oil
  •  lbs. raw lean beef stew meat
  • 3 Tbsp. whole wheat flour
  • 1 medium onion sliced thin
  • 2 medium celery stalks cut diagonally into 2-inch pieces
  • 6 medium carrots cut in half lengthwise, cut into 2-inch pieces
  • 2 bay leaves
  • ¾ tsp. sea salt (or Himalayan salt)
  • ½ tsp. ground black pepper
  • 3 cups low-sodium organic beef broth

Instructions

  1. Turn Instant Pot to sauté. Add oil and beef; cook, stirring frequently, for 5 to 6 minutes, or until beef starts to brown.

  2. Add flour; cook, stirring frequently, for 1 minute.

  3. Add onion, celery, carrots, bay leaves, salt, pepper, and broth to Instant Pot. Cover and seal Instant Pot; cook, on stew/meat setting, for 35 minutes. Release pressure to vent immediately. Let sit for 10 minutes. Remove lid and discard bay leaves.

Keto Cauliflower and Bacon Au Gratin

Now that Thanksgiving is over, all the focus goes towards Christmas planning, doesn’t it? And with the thought of Christmas comes all those gorgeous gourmet meals. When you are following the Keto diet, holiday meals can seem a little intimidating! I was lucky enough to find some amazing Keto Thanksgiving Recipes to enjoy and I will be scouring to do the same for Christmas.

In anticipation of Christmas gatherings, I came up with something that I can bring to any holiday and know I can eat it and others will love it too. This recipe is my version of a Keto Cauliflower and Bacon Au Gratin. I was thrilled to find various flavors of  Stella cheese to elevate this dish so the gourmet chefs in the family would be pleased.

 

Keto Cauliflower And Bacon Au Gratin

 

INGREDIENTS:

2 heads of cauliflower

1 pound of bacon

1 can of goat’s milk (12 oz)

1 stick of butter

Approx 12 ounces of Stella Cheese, various flavors

INSTRUCTIONS:

1) Cut the cauliflower in wedges and steam. Once cool, pull apart by the stem.

2) Slice the bacon and cook in a saute pan. Reserve the bacon grease.

3) Brown the cauliflower in the reserved bacon grease.

4) Melt the stick of butter in the saute pan. Slowly pour the goat’s milk and cheese into the melted butter to create a sauce. Reduce to the desired thickness.

5) Add the chopped bacon to the pan and saute all together.

6) Cook on low until the sauce is the desired thickness and serve warm.

 

 

 

You really could use any kind of Stella cheese that suits you, but I chose to use a combination of Goat cheese, Fontinella and 3 Cheese Blend.

 

 

I poured the Cauliflower and Bacon dish into a casserole pan and baked it at 350 degrees for 15 minutes, until golden brown. You could omit this step, but I think it made the dish even more decadent.

½ cup coconut flour
1 cup granulated Sucralose

3 eggs
¼ tsp salt

Instructions:

1. Combined all ingredients and mix until dough has formed.
2. Roll into tablespoon size balls and place on baking sheet lined with parchment paper.
3. Flatten cookies by making a crisscross mark on top of cookie with a fork.
4. Bake at 350F for 15-17 minutes, or until the edges are golden brown.

Balsamic Glazed Salmon With Sauteed Spinach

I could literally eat salmon every day of my life and be a perfectly happy woman. Unfortunately, my family doesn’t agree with my love affair, so I have to be content with having salmon a few times a month. One thing I have converted my family to is a Ketogenic lifestyle. In simple terms, this mean we eat a high fat, low carb diet. People often raise their eyebrows when I tell them this, especially if it is a new idea to them. I encourage everyone to do their own research and find what feels best for their own body.  Since this is the lifestyle that feels best for me and my family, I was thrilled to find a new product that fit right in with the Ketogenic diet – LARD. Yes, you read that correctly. I found Armour Premium All-Natural Lard in the baking aisle at my local Walmart and was thrilled. 

Admittedly, I used to roll my eyes at the thought of cooking with lard. When recipes called for lard, I would replace it with butter. It really wasn’t until I started educating myself on the Ketogenic diet that my mind started to change. Armour Premium All-Natural Lard is one of the healthiest cooking fats you can use. Lard is a better source of monounsaturated fats than butter, coconut and corn oil! This is coming from someone who uses coconut oil for everything. I have been converted!

 

 

You can use lard in so many recipes- baking, frying, sauteeing and more. It is extremely versatile, and it’s flavorless so it doesn’t change the taste of your recipe at all. Lard does not smoke at high heats either, so it is safe when frying or roasting. 

 

 

For an amazing Keto Friendly Balsamic Glazed Salmon, check out this recipe below. You can pair it with a side salad for some extra veggies and crispness. I am not the most exact whenit comes to measurements when I cook, but I tried to be as accurate as possible for you. If you like more spinach, add more spinach..more olives, add more olives. Make it your own and ENJOY!

INGREDIENTS:

4 (6 oz) salmon fillets

Armour Premium All-Natural Lard

2 cloves garlic, minced

1 T honey or pure maple syrup

1/3 cup balsamic vinegar

4 tsp Dijon mustard

salt and pepper to taste

fresh bag of spinach

4 T black olives

1/4 cup pine nuts

 

INSTRUCTIONS:

  1. Preheat oven to 400 degrees. Line a baking sheet with foil and spray with coconut oil cooking spray.
  2. Cook the garlic in about a tablespoon of lard in a medium saucepan, until tender. Add the honey, balsamic vinegar, dijon mustard, and salt and pepper to taste. Simmer until sauce starts to thicken, about 3 minutes. Remove from heat.
  3. Place the salmon fillets on the baking sheet and brush with half the glaze, reserving the other half for the end.
  4. Bake the salmon for 6-10 minutes, until you can flake with a fork. Brush them with remaining glaze.
  5. Saute the bag of spinach in 3 T of the lard. Sprinkle in the pine nuts and sliced black olives. Add salt and pepper to taste.

Maple Chai Roasted Chickpeas

If you think chickpeas are only for hummus, think again!

Chickpeas are loaded with protein and fiber and easily used in so many recipes. We use them in salads, soups, stews, and hummus, of course. But they are also great as a high protein snack for the whole family. This Maple Chai Roasted Chickpea recipe will convince you that they can also be an a simple, crunchy snack. Think of them as a healthy, protein-packed chip substitute that’ll power you through your afternoon.

This recipe is a family favorite in the cold winter months because of the warm, savory flavors, but also great in the warm months.

 

 

Maple Chai Roasted Chickpeas

Serves: 6 servings

Ingredients

  • 2 cups chickpeas (garbanzo beans), drained, rinsed, dried
  • 1 Tbsp. olive oil
  • 1 Tbsp. pure maple syrup
  • ½ tsp. ground ginger
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground cardamom
  • ¼ tsp. ground cloves
  • ¼ tsp. Himalayan salt
  • ¼ tsp. ground black pepper

Instructions

  1. Preheat oven to 400° F.
  2. Combine chickpeas, oil, maple syrup, ginger, cinnamon, cardamom, cloves, salt, and pepper in a medium bowl; toss gently to blend.
  3. Place chickpeas on large baking sheet in a single layer. Bake for 35 to 38 minutes, shaking baking sheet every 10 minutes, until brown and crunchy.

Snack on these Maple Chai Roasted Chickpeas fresh from the oven, or try them on a salad instead of croutons. Store leftover roasted chickpeas in a large jar with plenty of extra space for air to circulate, or keep them at room temperature in a paper bag.

No Bake Chocolate Peanut Butter Protein Balls

NO BAKE CHOCOLATE PEANUT BUTTER BALLS

Need a quick, healthy snack for the kiddos? My kids love these and I feel good about giving them!

You can substitute almond/cashew/sunflower butter for the peanut butter, and raisins or dried cherries or cranberries for the dates.

INGREDIENTS:

2 cups of old fashioned rolled oats
½ cup of ground flax seed
1 tablespoon of black chia seeds
1 teaspoon of cinnamon
¾ cup of dried pitted dates
½ cup of peanut butter
1 teaspoon of vanilla extract
1 scoop protein powder
¼ cup water
⅓ cup of dark chocolate chips

DIRECTIONS:

1. Add rolled oats, ground flax seed, chia seeds, cinnamon,
2. dried dates, peanut butter, vanilla extract, and vanilla protein powder to food processor.
3. Pulse until ingredients are blended and oats are finely chopped, almost like flour consistency. (about 7-9 times)
4. Slowly add water to the food process and blend until the mixture sticks together. You may need to add more or less water depending on your energy ball dough.
5. Add mixture to a large bowl, using your hands mix in chocolate chip.
6. Form energy bite mixture into 1″ balls and place on parchment paper lined baking sheet.
7. Serve immediately or store in air tight container in refrigerator.
