BACON WRAPPED STUFFED CHICKEN WITH GUACAMOLE
INGREDIENTS:
6 Chicken Breasts, butterflied or sliced thin
2 tsp Pink Himalayean Sea Salt
2 tsp Ground Pepper
3 tsp Avocado oil or MCT oil
3/4 cup Guacamole
18 Slices of Bacon

DIRECTIONS (6 servings):

Lay chicken flat on a cutting board and season with salt and pepper.

Spread guacamole on each piece of chicken and roll them up.

Wrap each chicken breast with 3 slices of bacon.

Lay in glass baking pan and add the oil to the pan.

Bake at 400 degrees for 20-30 minutes, until cooked thoroughly.

About 3-4 minutes before the chicken is done, turn the oven on broil to get the bacon crispy.

Dip in Queso, if desired!
